Looking for a cookie that's both healthy and delicious? These peanut butter banana cookies are just what you need! Made with natural peanut butter and ripe bananas, they are a great source of protein and potassium. Soft, chewy, and bursting with flavor, these cookies are a perfect snack or dessert.

Ingredients

  • 2 ripe bananas, mashed

  • 1/2 cup natural peanut butter (unsweetened)

  • 1/4 cup honey or maple syrup

  • 1 teaspoon vanilla extract

  • 1 cup rolled oats

  • 1/2 cup whole wheat flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/4 cup dark chocolate chips (optional)

Preparation

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix together the mashed bananas, peanut butter, honey or maple syrup, and vanilla extract until smooth.

  3. Add the rolled oats, whole wheat flour, baking soda, and salt to the bowl. Stir until well combined.

  4. Fold in the dark chocolate chips, if using.

  5. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  6. Flatten each cookie slightly with the back of a spoon.

  7. Bake for 12-15 minutes or until the edges are golden brown.

  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.



Notes:

  • These cookies are naturally sweetened by the ripe bananas and honey or maple syrup. 

  • Adjust the sweetness to your liking. 

  • For extra crunch, add a handful of chopped nuts or seeds to the dough. 

  • Store the cookies in an airtight container at room temperature for up to 5 days. Enjoy!
